Aimee's Famous Jerk Pork Burgers



By popular demand, here is the recipe for Matt's birthday burgers:

For 4 Burgers

Apple Slaw:
2 granny smith apples, peeled and grated, pat dry
1 lemon
1/3 cup chopped chives
1 1/2 Tablespoon maple syrup (the real stuff is best)
1/2 Tablespoon jerk seasoning (McCormick makes the one I use)
1/2 cup mayo


Mix the apples with the zest and juice from the lemon. Add the rest of the ingredients and mix up. Store in fridge while you make the burgers.

Burgers:
1 1/2 lbs. ground pork
1 1/2 Tablespoon maple syrup
1 1/2 Tablespoon jerk seasoning
8 slices of good bacon
4 slices of smoked cheese
(i use either gouda or smoked cheddar...or whatever cheese i end up having in the fridge, but smoked does taste best)
4 kaiser rolls (i've actually starting to use challah rolls because they aren't so bad for you and taste great)

Mix first three ingredients and from into patties. Pan fry bacon in large skillet until desired crispiness and then set it aside, covering it with foil to keep warm. Keep the bacon drippings in the pan and put heat on high. When it starts sizzling, add the pork patties and cook for about 4 minutes. Flip the patties and lower the heat to medium; cook for about 3 minutes, then lower the heat to low and put the cheese on top and cover the pan. Toast your rolls and then add the pork patties to the bottom bun, top it with bacon, then add slaw to the top bun and flip it on top.
